Our 60-hour Baking & Pastry Arts: Baking Principles microcredential is the perfect way to start.

Whether you're new to baking or already working in the field, the Baking Principles microcredential provides the foundational skills needed to grow in the baking industry.


What You'll Learn

  • Hands-On Skills: Learn essential techniques for mixing, kneading, and baking.
  • Ingredient Knowledge: Understand the science behind baking and how to select quality ingredients.
  • Culinary Math: Manage standardized recipes and ensure precise measurements.
  • Recipe Preparation: Produce a variety of baked goods like breads, cakes, pies, and doughs.
  • Health and Safety: Learn key practices to maintain a secure and safe workplace.

Program Structure

  • April 28 to May 26, 2025
  • In-person training at 91探花 Moncton + online training (Work Safely)
  • 2 days a week |Mon. & Fri. | 9 am to 3 pm

Certification

Once you successfully complete the Baking & Pastry Arts: Baking Principles microcredential, you’ll receive a digital badge as visual proof of your achievement. You can share this badge on your resume, LinkedIn profile, e-portfolio, or other digital platforms. Employers will be able to see your skills and know exactly what you’ve learned, as the badge highlights your proven abilities.


Admission Requirements

  • Minimum 16 years of age
    Asset: A general aptitude in mathematics and reading comprehension
  • Food Safety Certification* - proof of completion is required.

*Before starting the training, completion of one of the following Food Safety courses is required.  (pdf).


Dress Code

Safety shoes, black pants (no jeans), plain white t-shirt (clean)


Registration/Payment

Registration Deadline: Apr 14, 2025 

Please send completed application form (pdf) and proof of Food Safety Certification to tracy.magee@nbcc.ca.

Payment of course fees will be due by Thursday, April 17th, 2025. We accept cash, debit, Visa, MasterCard, Money Order or cheque payable to New Brunswick Community College (91探花).

Participants must be a domestic applicant (Permanent resident or Canadian Citizenship).

Withdrawal/Refunds: Requests for withdrawal from Continuing Education courses must be made within 20% of course duration. Refunds may take 4-6 weeks to process. An administrative fee may apply.
